Crispy BBQ Pork
INGREDIENTS
6-8 Oranges or Orange Juice
4-6 Limes or lime juice
1 Red Onion
2 Garlic Cloves
1 Pork Tenderloin
Honey
Trader Joes’s Hot Pepper Calabrian Chili Sauce
Rum
Spicology Lime Salt
This end of summer, grill recipe is one of the most tasty bites you’ll create. It takes some time but what is great that doesn’t? I hope you enjoy this tasty dish! Im using a stainless steel hibachi charcoal grilled named, The Yak Grill. This grill is perfect to achieve a great cook while being super portable. If you’ve never worked with charcoal before, fear not. Its not super hard. There are great resources on how to start one, I cover two methods in my previous post.
Crispy Pork: The Process
Marinade
Equipment:
Mixing bowl
Microplane
Hand Juicer
Whisk
Tablespoon
Steps:
Juice oranges.
Zest Limes then juice them.
Add 2 oz. of Coconut Rum.
Add 3 Tbsp of Kosher Salt
Score the pork in a crosshatch pattern.
Slice half and onion and add to a bowl.
Bring the Heat

Knife
Cutting Board
Slice pork into 1/2 inch wide slices.
Depending on how much pork, combine samba and honey 1:1 ratio. Then add in a “good amount” of Trader Joe’s Yuzu Hot Sauce.
Mix.
Add slices of pork and mix in bowl until pork is completely covered in the glaze.
Remove from glaze and set aside.
Get the Pork on the Grill
Equipment:
Yak Grill
Cutting Board
Skewers
Baking Sheet
Thaan Charcoal
Tongs
Skewer pork then onion, intermediately.
Lay skewers over grill grates.
Cook for about 7-10 minutes on each side (depending on the size cuts you made)
Sprinkle some lime finishing salt and enjoy!
