Grilled Cauliflower with Chimichurrii Inspired Sauce

Grilling is perfect for the summer and I have a dish that will keep the entire party happy. If you’re a meat lover, we have a substitute for a steak. If you’re vegatarian, I guarantee you add this dish to your next grilling party menu. This grilled cauliflower tastes best over a charcoal grill. Im using a stainless steel hibachi charcoal grilled named, The Yak Grill. This grill is perfect to achieve a great cook while being super portable.

If you’ve never worked with charcoal before, fear not. Its not super hard. There are great resources on how to start one, I cover two methods in my video above.

 

INGREDIENTS

  • Purple Cauliflower

  • Scallions

  • Parsley

  • Lemon

  • Calabrian Chilli Paste

  • Lime Salt (kosher will do)

  • Olive Oil

Grilled Cauliflower: The Process

Chimichurrii-inspired sauce

Equipment:

  1. Mixing bowl

  2. Cutting Board

Steps:

  • Wash your produce

  • Finely chop parsley. Add to bowl.

  • Juice lemon into mixing bowl and stir.

  • Scoop out one to two massive tablespoons of Calabrian chili paste.

  • Add a few pinched of lime salt

  • Stir and add in your favorite olive oil. The sauce should look wet.

The Steaks

Equipment:

  1. Yak Grill

  2. Cutting Board

  3. Baking Sheet

  4. Thaan Charcoal

  5. Tongs

  • Cut the cauliflower horizontally into steaks.

  • Lay steaks on a baking sheet and cover with olive oil.

  • With your coals in the Yak Grill, place steaks atop grate.

  • Cook for about 5-7 minutes on each side.

  • Liberally spread the chimichurri sauce atop the cauliflower and enjoy.
